LALCAFÉ BRIOSA™ is a Saccharomyces cerevisiae yeast selected for its specific benefits in the post-harvest processing of Arabica and Robusta coffees. Suitable for both natural and pulped processes, it supports efficient and controlled fermentations.

Its enzymatic activity promotes faster demucilagination, enabling an earlier onset of fermentation. In combination with LALCAFÉ™ selected bacteria, it contributes to greater complexity through enhanced microbial synergy.

LALCAFÉ BRIOSA™ helps preserve the intrinsic aromatic profile of each coffee variety. It also contributes to improved green coffee shelf-life, maintaining quality during transport and extended storage.

Description

LALCAFÉ BRIOSA™ is a Saccharomyces cerevisiae yeast selected for its specific benefits in post-harvest processing of Arabica and Robusta coffee varieties. It can be used in both natural and pulped processes.
The yeast enzyme activities cooperate with those of our LALCAFÉ™ selected bacteria increasing the complexity of the coffee.
LALCAFÉ BRIOSA™ is also suitable for classic coffee.
