At the Isla Hawaii Private Collection Auction, hosted by The Alliance for Coffee Excellence (ACE), 12 of 16 winning coffees used yeast fermentation to enhance flavour and consistency. The top lot, a washed SL34 inoculated coffee from Kona Farm Direct, showcased tropical notes proving yeast is a powerful tool in specialty coffee innovation.
