Fantastic Technical Days in Brazil: Fermentation Beyond Flavour

We recently had the pleasure of hosting two LALCAFÉ™ technical days in Brazil, in Patrocínio (Minas Gerais region) and Franca (São Paulo region), two key regions for specialty coffee production.
For the second consecutive year, we were honored to welcome Professor Flávio Borém, who shared valuable insights on coffee quality, post‑harvest processing, and the impact of LALCAFÉ™ selected yeasts on coffee shelf life. His expertise highlighted how controlled coffee fermentation can contribute to greater stability, consistency, and sensory performance in the cup.
We sincerely thank all participants for their enthusiasm, engagement, and interest in fermentation-driven quality improvement.
